Easter Egg Dirt Pudding

Equipment

  • 12 2 oz Mini Dessert Cups Square shaped (purchased at Wal-Mart or Amazon)

Ingredients
  

  • 1 4-pack Chocolate Snack Pudding
  • 1 cup Shredded Coconut (Sweet or Unsweetened)
  • Green Food Coloring
  • 4 Oreo Cookies
  • 1 9 oz Cadbury Mini Eggs Milk Chocolate

Instructions
 

Prep:

  • Grass – Take the cup of shredded coconut and place in a small mixing bowl. Add several drops of the green food coloring and mix. Add more if you desire a darker green color.
  • Dirt – Take the 4 Oreo cookies and remove the sugar filling and toss out. Place the Oreo cookies in a snack-size Ziplock. Crush to fine or coarse by using a rolling pin or a kitchen mallet.

Presentation:

  • Lay out the cups on a table or counter.
  • Scoop 1-2 Tablespoons of pudding into bottom of cups.
  • Add a layer of the crushed Oreos to your desired amount. I would keep it to a fairly thin layer just enough to differentiate between the pudding and Oreo layers.
  • Add a layer of shredded coconut.
  • Finally, place one or two or three mini eggs to top it off.

Notes

Place assembled dirt cups onto a serving platter for presentation.

Fourth of July Patriotic Chex Mix

A fast, easy and festive 4th of July Patriotic Chex Mix. This red, white, and blue snack is a sure hit whether at that All-American barbeque, poolside, or just hanging out on the lawn watching fireworks!

Equipment

  • 1 Large Baking Sheet Pan
  • 1 Large Mixing bowl
  • Parchment Paper

Ingredients
  

  • 1 box Rice or Corn Chex Cereal
  • 2 cups Cheerios Blueberry Cereal
  • 2 cups Mini Twisted Pretzels
  • 3 cups Lightly Salted Popcorn (I used Nearly Naked Popcornopolis)
  • 2 cups Mini Marshmallows
  • 1 pkg Vanilla Candy Coating (I used 16 oz Kroger Brand)
  • 4 Tbsp Patriotic Sprinkles (Red, White and Blue)

Instructions
 

  • Prep: Line the large baking sheet pan with parchment paper and set aside.
  • Mix: Mix cereal, pretzels, popcorn, and mini marshmallows in a large mixing bowl gently with a spatula.
  • Melt: Melt the white chocolate candy coat in the microwave for 45-50 secs. Gently stir softened white chocolate. Place in microwave for 15 seconds at a time if further melting of chocolate is necessary. Microwaving for more than 15 minutes at a time can cause the chocolate to turn brown in color from overheating.
  • Coat: Pour the melted candy coating over the cereal mixture. Gently stir with spatula until fully coated.
  • Spread: Spread the candy-coated cereal mixture evenly onto the lined baking sheet.
  • Sprinkle: Sprinkle the patriotic sprinkles over the entire cereal mixture.
  • Set: Allow the cereal mixture to harden for about 20 minutes at room temperature. To speed up the process, place the baking sheet with cereal mixture in the refrigerator for 10 minutes. Then, break up into pieces and enjoy!

Notes

Store in an airtight container for up to a week.
